Roast Aubergines With Yoghurt & Harissa

Although aubergines are commonly referred to as a vegetable, they are in fact a fruit. We have found a simple yet delicious recipe which is perfect for an easy lunch or as a side dish with your evening meal.


Ingredients:


- 2 aubergines

- 1 tbsp olive oil

- 40g butter

- 1 tsp harissa

- 3 tbsp greek yoghurt

- 1 garlic clove, crushed

- 1/2 tbsp chopped coriander

- 1 tsp sesame seeds


Method:


1. Heat oven to 200c. Pierce aubergines a few times with the tip of a knife, then brush with olive oil and put on a baking sheet. Roast for 40 minutes until tender.


2. Melt butter in a pan, then stir through harissa. Cut aubergines in half and season. Mix yoghurt with garlic and spoon into aubergines, then drizzle over spiced butter. Scatter over coriander and sesame seeds.
